The plan of salvation does not lie in creation, but in the sacrificial death of Jesus and the shedding of His blood in place of fallen man. The fall from grace, when a plan of salvation first became necessary, happened after the completion of creation, i.e. after the seventh day.

Quite apart from how the Catholic Church wants to reconcile the concrete fall of man and God’s real plan of salvation when it describes the theory of evolution as compatible with the story of creation. Everything pretty confused.
